Hot dogs; everybody loves them. We fry them in a pan, cook them over charcoal, or boil them. Here are two great hot dog recipes and three condiment recipes I found, tried, and loved. I hope you like them too. Note the websites where I found them...all are worth visiting. CROCKPOT CHILI DOGS- 6-8 servings: from southernfood.about.com You'll need: 1 pound hot dogs, 1 large onion finely chopped, 2 cans of chili with beans (15 ounces each), 1 teaspoon chili powder, 4 ounces shredded cheddar cheese, hot dog buns Preparation instructions: Combine hot dogs, chopped onion, chili, and chili powder in the slow cooker; stir well. Cover and cook on low for 6 to 9 hours, or high 3 to 4 hours. Spoon sauce over hot dogs in rolls and top each with a little shredded cheese. HOISIN GLAZED DOGS- serves 4 people: thanks to hot-dog.org Ingredients: cup of hoisin sauce, 2 tablespoons of honey, 1 tablespoon of minced fresh ginger root, peeled, teaspoon of minced fresh garlic, 8 hot dogs, 8 buns, split, cup of chopped green onions Preparation instructions: Heat hoisin, honey, ginger root and garlic in a small pan over medium heat. Let the sauce simmer for 2-3 minutes before removing from heat. Reserve cup sauce. Lightly score the hot dogs diagonally with a knofe. Brush the hot dogs liberally with sauce. Preheat your grill to medium heat. Placethe hot dogs 4-5 inches from the heat. Cook the hot dogs for 10-12 minutes, basting with sauce frequently. During the last 3-4 minutes, open the buns and toast them lightly over indirect heat. Brush the buns with the 1/4 cup of reserved hoisin sauce, and place the hot dogs on them. Add chopped onions. YOCCO'S HOT DOG SAUCE- found at thatsmyhome.com Ingredients: 1 pound ground meat, 1 medium onion, 3 tablespoons chili powder, 1 teaspoon salt, 3/4 teaspoon oregano, 3/4 teaspoon cumin, 1/4 teaspoon red pepper flakes, 2 cups water Preparation instructions: Brown the meat, breaking up pieces, and the onions. Drain. Run it through a little chopper if you want it smaller. Add spices the spices and mix well. Add the water and simmer for an hour. The sauce may be frozen. HOT SWEET VIDALIA ONION RELISH- from razzledazzlerecipes.com Ingredients: 1 tablespoon oil, 1 Vidalia onion, diced, 1/4 each, red and green bell pepper, diced, 2 tablespoons chopped fresh parsley, 1 tablespoon lime juice, 1 teaspoon chopped fresh mint, 1/2 teaspoon honey, 1/4 teaspoon each of salt and cayenne pepper Preparation instructions: In skillet, heat oil on medium-high heat; saute onion and peppers until wilted slightly and onions are translucent. Remove from heat and stir in remaining ingredients. Serve warm. HONEST ABE'S CORN RELISH- yields 1/2 cup- found at hot-dog.org You'll need: 2 teaspoons of extra-virgin olive oil, 1 teaspoon of red wine vinegar, 1 cup of extra-sweet corn kernels, fresh cooked or frozen and thawed, cup of grape or cherry tomatoes, cut into small pieces, cup of finely chopped red onion, 1 tablespoon of chopped fresh basil leaves, 1/8 teaspoon each of salt and freshly ground black pepper Preparation directions: In a medium sized bowl, whip the vinegar and oil together. Add the salt and pepper to season. Stir in the basil, onion, tomatoes, and the corn. Cover and chill in the refrigerator. Spoon two tablespoons of relish over each hot dog.
